  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 1 red chili, finely chopped (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 can (14 ounces) coconut milk
  • 1 can (14 ounces) diced tomatoes
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish

  1. Sauté Aromatics: In a large pot, heat the coconut oil over medium heat. Add the finely chopped onion and sauté until translucent, approximately 5 minutes. Introduce the minced garlic, grated ginger, and chopped red chili, cooking for an additional 2 minutes until fragrant.

  2. Add Spices: Stir in the ground cumin, coriander, turmeric, and paprika, allowing the spices to toast for about 1 minute, which enhances their flavors.

  3. Incorporate Lentils and Liquids: Add the rinsed red lentils, vegetable broth, diced tomatoes (with their juices), and coconut milk to the pot. Stir well to combine all ingredients.

  4. Simmer the Soup: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and let the soup simmer uncovered for 20-25 minutes, or until the lentils are tender and the soup has thickened to your preference.

  5. Season and Serve: Season the soup with salt and freshly ground black pepper to taste. Stir in the lime juice just before serving to add a bright, fresh note. Ladle the soup into bowls, garnish with chopped fresh cilantro, and enjoy warm.

Notes

Alternative to Coconut Milk:

If you prefer a substitute for coconut milk, heavy cream is an excellent alternative. It provides a similar creamy texture and richness. Use it in a 1:1 ratio as a replacement for coconut milk. Keep in mind that heavy cream is a dairy product, so it’s not suitable for those following a vegan or dairy-free diet.

 

For a dairy-free option, consider using Greek yogurt. It offers a creamy consistency and can be used as a 1:1 substitute for coconut milk. However, to prevent curdling, add the yogurt towards the end of the cooking process and avoid boiling the soup after its addition.
